Jatoba is a heavy-duty hardwood grown in Central and South America. It is known as "Brazillian Cherry" due to its resemblance to the North American cherry hardwood. Jatoba is a very hard and heavy wood which makes it excellent in cutting boards. Its other uses include furniture making and flooring.

The design of the Dark Forest Board came to me when I was making and designing the Sunny Day Board. I was visualizing a darker version of the Sunny Day Board. The only difference between the Sunny Day Board and the Dark Forest Board is one wood, that's it. Instead of using white maple, I chose to use the darker jatoba wood. It is equally as hard and well-suited for cutting boards.
